Blueberry Muffins
1 cup fresh blueberries3 tablespoons shortening, plus extra to grease muffin pan
3 tablespoons sugar
1 egg
1 cup milk
1 ¾ cups flour
3 teaspoons baking powder
¾ teaspoon salt
1. Preheat the oven to 400 degrees. Lightly grease the muffin pan with shortening.
2. Wash and dry the blueberries.
3. Put the 3 tablespoons of shortening into a large bowl. Slowly stir in the sugar until the mixture is light.
4. Crack the egg into the bowl. Beat and stir in the milk. Mix well.
5. Sift the flour, baking powder, and salt into the bowl.
6. Gently mix enough to moisten and add in the blueberries.
7. Use the mixture to fill each muffin cup about 2/3 full.
8. Bake the muffins on the middle oven rack for 20 minutes.
9. After 20 minutes, insert a toothpick into one of the muffins to see if they are done.
12. Remove the pan from the oven with mitts and allow the muffins to cool before eating.
